Banana Cinnamon Muffins - Noodle Board Recipes

Hello and welcome to our first ever Noodle Board Recipes series!

We love our kitchen spaces, so we also love cooking and baking. Today, we will be making Banana Cinnamon Muffins.

It is very simple. We hope you enjoy making it as much as we did!

Recipe:

  • 200 grams plain flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking power
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 120 grams brown sugar
  • 100 grams butter (room temperature unmelted)
  • 2 eggs
  • 1 tea spoon vanilla extract
  • 90 grams plain yogurt
  • 3 ripe bananas mashed (around 400-450 grams, unpeeled)

Steps:

1) Preheat oven at 180C for conventional oven (160C fan forced).

2) In a mixing bowl, add plain flour, baking soda, baking powder, salt, cinnamon, and brown sugar together and mix well until well combined

3) Unpeel all the bananas and put the bananas in a bowl and mash them. You can mash them as much as you want, but you can also mash it roughly so you can also get some chunky bits of banana in the muffins.

4) In a separate mixing bowl, add the rest of the wet ingredients; eggs, vanilla extract, yogurt, butter, and mashed bananas, and mix well until fully combined.

5) Combine the wet and dry ingredients all together until just combined. Do not overwork the flour, otherwise the end result may be too dense and tough.

6) Using a 12 cup pan muffin tray, spoon the banana cinnamon mixture evenly into each muffin cup.

7) Bake the muffins in oven for about 18-25 minutes or until golden brown on top. Every oven is different so it is recommended to use a metal skewer and check if the muffins are fully cooked from the 18th minute onwards. If not cooked, bake a further 2-3 minutes and check again each time.

Once baked and cooled slightly, they can be served warm!
