A decadent dark chocolate mousse will leave you coming back for more! Light, soft, and smooth chocolate mousse. You can use any level of dark chocolate. How bitter or sweet depends on the chocolate you use! Feel free to use the chocolate of your choice.
The full recipe:
180 grams dark chocolate
60 grams butter
3 egg whites
50 grams sugar
170 grams heavy cream
20 grams sugar
Steps
1) Combine dark chocolate and butter in a bowl. Put into microwave and heat in small bursts (do not overheat or chocolates may split!). Then mix together until fully combined.
2) Place 3 egg whites into bowl along with 50 grams of sugar. Mix with whisk or stand mixer. Mix until stiff peaks.
3) Combine all the heavy cream with 20 grams of sugar in a bowl. Mix with whisk or stand mixer. Mix until stiff peaks.
4) Fold a third of whipped egg whites with melted chocolate. Fold gently. Once fully combined, fold the next third. Repeat the same steps until all the egg whites are fully combined with the chocolate.
5) Fold a third of the whipped heavy cream with the chocolate mixture. Fold gently until all combined. Then fold the next third and repeat until all the cream has been folded.
6) Spoon mixture into cups or glasses of your choice. (You may also choose to use a piping bag to distribute the chocolate mousse)
7) Decorate chocolate mousse cups/glasses with berries and/or fruits of your choice.
8) Put chocolate mousse cups/glasses into fridge to set for at least an hour or more.
